2.2 Product size: The pitted red maraschino cherries shall be of the following sizes when specified in the solicitation, contract, or purchase order.

1/ Not more than 10 percent, by weight, of all the cherries are smaller than the designated size; provided no more than 1 percent, by weight, are more than 2 mm smaller than the designated size.

by weight, are more than 2 mm smaller than the designated size.
3. SALIENT CHARACTERISTICS.
3.1 Processing: The pitted red maraschino cherries shall be packed in a syrup solution and process to insure preservation. The syrup at time of “cut out” (not earlier than 7 days after packing) shall not be less than 37O Brix at 20O C. Except for color, the pitted red maraschino cherries shall meet the requirements for U.S. Grade A, stemmed and pitted style, of the United States Standards for Grade of Sulfured Cherries.
3.3 Flavor and odor. The pitted red maraschino cherries shall have a distinct, characteristics maraschino, cherry flavor and odor.
3.4 Color: The pitted red maraschino cherries shall have a uniform characteristic red maraschino cherry color. The red color shall be achieved by using any of the food colors currently certified and approved by the Food and Drug Administration.
3.5 Flavoring ingredients: Natural and/or artificial flavoring ingredients of the type and quantity used in the manufacture of pitted red maraschino cherries may be added. Calcium chloride, citric acid, potassium sorbate, and sodium benzoate may also be used.
